Spring sweet potato fish cakes

These are quick, tasty, and a healthy lunch or dinner for your little ones. You could encourage them to cut the spring onions into pieces and they would love rolling their fish cakes into the breadcrumbs! 

As with all our recipes, allowing your child to do as much of the process themselves, where appropriate, is key in supporting their learning and development. So, think about if they can weigh, mix, chop or scoop independently, as this is where the real learning comes in!

Ingredients: 

  • 200g white fish
  • 400g sweet potato
  • 2 spring onions
  • 100g breadcrumbs
  • 1 egg
  • 1 clove of garlic – chopped 
  • 1 tbsp chives 
  • 1 small lemon 
  • Tbsp of olive oil 

 

How to: 

  1. Preheat the oven to 200c. 
  2. Peel and boil the sweet potato for 10 – 15 minutes. 
  3. Wrap the fish, garlic, chives, zest and juice of one small lemon in tin foil, and bake for approx. 15 minutes until cooked thoroughly. 
  4. Drain the potatoes, mash until smooth. 
  5. Flake the fish and add to the potatoes, alongside the spring onions. 
  6. Make patties out of the mixture and roll into breadcrumbs until they are coated fully. 
  7. Bake the fish cakes into the oven for 15 – 20 minutes, until golden brown.
