Pumpkin houmous recipe
Do you have some pumpkin left over from carving and aren’t quite sure what to do with it? Try this tasty houmous recipe, perfect for dunking peppers and warm, soft pitta bread. This is also great for a Halloween party snack or treat! If you don’t have pumpkin, you could replace it with butternut squash.
You will need:
- 500g pumpkin flesh
- Half a lemon
- 400g chickpeas
- Tahini paste
- Two garlic cloves
How to make it:
- Lay your chunks of pumpkin on a roasting tray, and splash over a little oil of your choice. Roast at 180 degrees for 45 minutes.
- While the pumpkin is roasting, peel your garlic cloves and drain your chickpeas.
- Once roasted, pop your pumpkin into a food processor or blender, along with the drained chickpeas, two tablespoons of the tahini paste, prepared garlic cloves and squeeze in the juice from your lemon.
- Blend the mixture until smooth.
- Serve with dips of your choice – chopped red pepper goes well with this!
