Lemon drizzle squares

A bit of a treat, but so easy to make and great to do quickly with a few ingredients.

As with all our recipes, allowing your child to do as much of the process themselves, where appropriate, is key in supporting their learning and development. So, think about if they can weigh, mix, chop or, scoop independently, as this is where the real learning comes in!

Ingredients: 
  • 275g self-raising flour
  • 225g caster sugar
  • 225g butter
  • 4 eggs
  • 2 tsp baking powder
  • 4 tbsp milk
  • Grated zest of 2 lemons 
For the glaze 
  • Juice of 2 lemons
  • 175g sugar 
How to: 
  1. Preheat the oven to 180C or Gas mark 4. 
  2. Grease a square tin with butter and line with baking parchment. 
  3. Mix all the ingredients together in a large bowl, until well combined. 
  4. Place the mixture in the tin and bake for 35 minutes (iIt should be springy to touch). 
  5. Remove from the oven and leave to cool. 
  6. Mix the sugar and lemon juice and drizzle over the top. 
  7. Serve!
