Egg muffins

Great quick, easy meals or snacks on the go! 

As with all our recipes, allowing your child to do as much of the process themselves, where appropriate, is key in supporting their learning and development. So, think about if they can weigh, mix, chop or, scoop independently, as this is where the real learning comes in!

Ingredients: 

  • Tbsp of olive oil
  • 50g cherry tomatoes diced
  • Small courgette – diced 
  • 25g spring onions – diced 
  • 25g feta cheese – diced 
  • 6 medium eggs

How to: 

  1. Preheat the oven to 200C or Gas Mark 6. 
  2. Use the olive oil to grease the holes in a 6-portion muffin tin. 
  3. Pan fry the courgette until tender. 
  4. Whisk the eggs and add all veg and feta. 
  5. Distribute into the muffin tin and bake until set (approx. 15 mins). 
  6. Remove, cool and eat!
