Easy Peasy Pancakes

We think pancakes are delicious and can be enjoyed morning, noon or night. You could even transfer a cooked pancake to a small, cold pan for your child to practise their flipping! 

As with all our recipes, allowing your child to do as much of the process themselves, where appropriate, is key in supporting their learning and development. So, think about if they can weigh, mix, chop or scoop independently, as this is where the real learning comes in! 

Ingredients: 
  • 200g plain flour 
  • 2 large eggs 
  • 350ml milk 
  • 1 tbsp vegetable oil (extra for frying) 
How to: 
  1. Put the flour into a large bowl, make a well in the middle and pour in the milk and eggs. 
  2. Whisk the liquid mixture, slowly incorporating the flour. 
  3. Add the tablespoon of vegetable oil and whisk until smooth. 
  4. Lightly coat a large frying pan with oil and heat over a medium heat for about a minute. 
  5. Add a ladleful of batter to the pan and swirl around the pan to form a nice even, thin layer. 
  6. Cook for 30 seconds and use a spatula to check the underside is golden brown.  
  7. Once golden brown, flip the pancake over and cook on the other side, before serving. 

Serve with yoghurt, fruit and fruit zest for a sweet pancake or cheese and ham for a savoury pancake.
